Bircher Museli Get's a Makeover

If you don't know what Bircher Museli is, allow me to explain.


It is the original overnight oats recipe and was designed for it's health benefits by a Swiss Physician called Maximilian Bircher-Brenner around 1900.


Traditionally, Bircher Muesli is made with apple juice, yogurt and raisins but I wanted to give it an even healthier make-over and boost the nutrients of this super quick and yummy recipe.


Why so good?


Well, soaking oats in this way not only makes them creamier but they become easier to digest. I have added the whole fruit of the apple which brings in the fiber and with the addition of the hemp seeds, we are boosting both the protein and healthy fat content meaning we stay fuller for longer.


Raisins are fine to use here but they do have a higher sugar content and a lot of the time, they are mixed with vegetable or other hydrogenated oils. If you are using raisins instead of goji berries, it is preferable to buy them organically as grapes are a highly sprayed pesticide fruit.


Goji berries are delicious and have great health benefits which is why I have included them. They plump up when soaked and are widely used in Chinese Medicine for their anti-aging properties and because they help to balance and strengthen the body.

Combining all of these elements, my made over Bircher Muesli makes a great breakfast choice.

I think this may become your new staple. I love it! It takes about 5 minutes, you mix everything together, leave it in the fridge overnight and hey presto, your breakfast awaits in the morning.


You can play around with the ingredients and flavours, serve as is, or add additional toppings such as berries, nuts and seeds.



Made Over Bircher Muesli


Serves 3


Preparation time 5 mins plus overnight soaking


Ingredients


1 cup Oats

3 tablespoons Hemp Seeds (or use 2 tbsp Flax Seeds)

2 tablespoons Flaked Almonds

2 tablespoons Desiccated Coconut

2 tablespoons Goji berries

1 Apple grated

1/2 cup Yogurt (use Greek, or for dairy free, use coconut yogurt)

1 tablespoon Maple Syrup

1/2 teaspoon Cinnamon


Method:


1. In a large bowl, combine the oats, hemp seeds, almonds, coconut, cinnamon and goji berries.

2. Mix in the almond milk, yogurt, and grated apple. Stir well.

3. Cover the bowl or divide servings into smaller bowls/mason jars.

4. Soak overnight in the fridge.

5. Enjoy in the morning, adding any extra desired toppings (I like to remove the muesli from the fridge about 30 minutes before serving and add toasted pecans on top).
