Raw Cookie Dough Balls

These go down a treat at our retreats and I also served this at an event I catered for and was asked for the recipe.

So here it is, because we all need something healthy and tasty sitting in the fridge of freezer and these balls, are just it.

They are vegan if using non dairy chocolate chips and gluten free if you buy GF oats and like all my recipes, quick and easy to do. You will need a food processor for this one.

Enjoy.

Raw Cookie Dough Balls

Preparation time 15 minutes

  • 1 ½ cups of oats (GF if needed)

  • ½ cup ground almonds

  • ¼ teaspoon salt

  • 2 tablespoons coconut oil (melted)

  • 2 tablespoons almond butter

  • ¼ cup maple syrup

  • 1 teaspoon vanilla extract

  • ¼ cup chocolate chips (optional)

  1. Add the oats to a food processor and grind to a flour like consistency. Then add the ground almonds and pulse to combine

  2. Next, add all of the other ingredients to the food processor, and blend until a dough forms.

  3. If using chocolate chips, fold these in by hand.

  4. Using a tablespoon, scoop into bite size balls

  5. Line onto parchment paper and a baking tray and freeze for 30 minutes.

  6. To serve, you can eat these from the freezer allowing them to sit for a few minutes or store and eat them from the fridge.
